Before the week begins you see Gian and Luigi, side by side, writing the menu. It’s unhurried, considered, something closer to a ritual than a task. Inevitably when the room later fills with that familiar rhythm of conversation, glasses meeting, laughter rising there’s a subtle feeling of it all just slotting into place perfectly.
When we asked Gian about working with family, his answer is simple, almost understated: “We work as a team. Everyone has their strengths, their weaknesses… no matter the day, someone steps in.” And you see it in how they move around one another, shifting roles without pause or instruction. It’s a fluid and intuitive choreography that feels almost inherited.
